[vc_row][vc_column width=”1/2″][vc_column_text]Walking to the front door of Pollo Tropical, waiters burst through, rushing in and out towards the patio of the restaurant, carrying trays full of food to hungry families. As soon as you enter the fast-food joint, the bright walls and displays catch your eye and your expectations heighten. Pollo Tropical, a restaurant chain of Caribbean cuisine is the latest addition to the Castle Hills market place.

Waiting in line, the interior of the restaurant had a modern but ‘tropical’ feel with palm trees and colorful decor. Near the front was a sauce station where they kept signature sauces available to try. Looking around, the restaurant was not packed, so you would have assumed that the staff and service was going smoothly. Just to let you know now, Sunday night is not the best time or day to go.

After taking a look at the menu, which consisted of some of their classics like fried yuca and corn fritters, I ordered a chicken caesar wrap and a ‘Tropical Breeze,’ a drink that contains kiwi, mango and other fruits. My dad ordered a chipotle chicken sandwich, chicken wings and we shared a tres leches cake. We faced more problems through the night like having to wait 45 minutes for our food and getting the wrong order. The only reason that we actually got our food was because my dad went to the front of the line and demanded to know when the food would be ready.

In nearly five minutes, the chef had prepared all the food and packed it to-go, even though we were staying. Once we got our food, everything tasted great except the chicken wings, which were a bit bland but immediately soaked up flavor and spice from the ‘Spicy Poyo Poyo’ signature sauce. The chicken caesar wrap was comprised of tender, seasoned chicken and lettuce. The ‘Cilantro Garlic’ signature sauce complemented the wrap perfectly. According to my dad, the chipotle chicken sandwich was pretty basic with lettuce and tomatoes. But, the tang of the chipotle mayo spread made the sandwich worth the wait. The tres leches was very spongy, but had a sweet sauce and rich cream covering the top.

Bottom line, I would not recommend going to the restaurant during the weekend because of the service issues. Try your luck on a weekday. I don’t plan on going back anytime soon.
